We make our Prickly Pear Cactus Jelly in small batches with fresh-picked Prickly Pear Cactus fruit, cane sugar, pectin and lemon juice.
Prickly Pear Cactus fruit is incredibly tasty and just as colorful, but a bear to work with! Each fruit has to be picked with metal tongs, then individually singed over an open flame to burn the tiny spines, or glochids, before cutting each fruit to scoop out the insides. Once scooped out, the fruit is mashed then strained and filtered to obtain the juice for the jelly. It's a lot of work but we think it's worth it. Taste it and you'll agree!
Perfect on toast, pancakes, pastries, straight out of the jar, and makes a great gift!
