Nothing says summer in the southwest like a freshly-made margarita served on the rocks. But a tall frosty Mojito comes close, especially if it's our Prickly Pear Cactus Mojito.
Here at Laughing Javelina Farm, we like simple drinks, because after three or four, or six, making a drink shouldn't require a PhD. Our Prickly Pear Cactus Mojito checks off all our boxes--simple and delicious and good for you! But don't just take our word for it--take our syrup and make your own!
Ingredients (makes 2 regular or one grande)
- 4 oz white rum
- 1 oz Prickly Pear Cactus Syrup
- 2 oz fresh squeezed lime juice
- 1 oz soda water, optional
- few springs of fresh mint
Instructions
- Combine rum, prickly pear syrup, lime juice and ice in a tall glass and stir well to mix.
- Pour into two collins or highball glasses filled with ice
- Optional, top off with a little soda water
- Garnish with mint sprigs
Note: Like all of our cocktail recipes, our measurements are just starting points from which to jump off.
You can substitute limeade for lime juice but it'll make the cocktail sweeter. You can also cut with fizzy water to add some pop and make it less sweet.
